Iodine is naturally found in limited food sources, mainly seafood, dairy products, eggs, and meats. While some countries fortify common foods like bread with iodine, such practices are less prevalent in the U.S. due to various factors, including dietary trends favoring non-iodized salts such as Himalayan or sea salts. Additionally, organic dairy and processed foods typically contain lower iodine levels. Populations practicing vegan diets, those with food allergies, or individuals with restricted diets due to autism spectrum disorder are at higher risk.
Historically, iodine deficiency led to 'goiter belts' across regions like the Great Lakes and Appalachian areas. The introduction of iodized salt in the 1920s significantly reduced cases. However, present-day perceptions about salt and health have led many to avoid iodized salt, unintentionally increasing deficiency risks.
Iodine deficiency impairs thyroid hormone synthesis. When prolonged, it results in thyroid enlargement (goiter) and can cause severe health issues, including cognitive impairments in children and metabolic disturbances at any age. Dr. Serrano-Gonzalez recalls a case of a teenager with an enlarging goiter, where dietary restrictions led to iodine deficiency—highlighting the importance of proper nutrient intake.
To combat this, healthcare providers recommend diversifying diets to include iodine-rich foods and, when necessary, using iodized salt in moderation. Education aimed at reducing stigma associated with iodine deficiency and dietary restrictions is essential. Health professionals are also engaging in public awareness efforts and hospital-wide educational programs to prevent and address iodine deficiency effectively.
